Flatbread Pizza made with Krusteaz Italian Herb Flatbread-and a flash giveaway!-

Krusteaz, one of the sponsors at IFBC (International Food Bloggers Conference), was kind enough to give away some boxes of their Italian Herb Flatbread Mix for conference attendees to try out. I ended up with two boxes, so I have one to share! (Keep reading for more info on the flash giveaway!)

I usually shy away from mixes of any kind but this sample from Krusteaz was calling my name. I’ve been so busy traveling lately that getting back into the swing has taken me some time. I had most of the toppings on hand and thought it would be a great way to wind down the weekend. No muss, no fuss but lots of flavor and… fast! 

The box comes with a packet of yeast and the flatbread mix, which you just stir together with very warm water and olive oil. Couldn’t be easier! 

Full disclosure, my mouth is watering for more of this flatbread pizza as I write this post. Too bad there aren’t any leftovers for late night snacking.

Dump the mix and packet of yeast into a mixing bowl, then add the oil (I used olive although it called for vegetable) and warm water. Mix well and when evenly distributed, cover and leave in bowl while oven preheats to 475, should be about 10 minutes.

 When the dough was ready, I floured the cutting board and rolled two halves into oblong-ish pieces. It was very easy to roll out and I didn’t need to fuss with it at all (like I do the store bought dough in the bakery section).

To cook the pizza I used a round pizza pan that has holes on the bottom to help it crisp up. If you don’t have a similar pan, just follow the directions on the box. I sprayed the top of the surface with some olive oil to prevent it from sticking.

You don’t need to buy a fancy pizza sauce.Try this instead!

Take a tablespoon or two of tomato paste, mix in some olive oil, balsamic vinegar, salt and pepper. Stir well. You get a flavor packed, simple sauce to top your flatbread or pizza and –even better– no waste! Make as much as you need and pop the tomato paste back in the fridge. It’s also great because it’s never going to make your pizza soggy or wet.

Of course, you can top your pizza with whatever you’d like but I chose to do two different pizzas. I went ahead and used ingredients I have on hand. The possibilities are endless. 

The first was topped with the tomato sauce I whipped up, prosciutto, olives, mozzarella, with a spritz of olive oil spray. 

The second had olive oil, goat cheese, fresh grape tomatoes when it went into the oven. After 10 minutes I added shaved manchego, arugula, and white balsamic vinegar and then went back in the oven for 4-5 minutes.

Here’s the final product! So scrumptious.

 We served this with a simple Caesar salad and the flavors all came together beautifully.
