Happy November, friends! Can you believe it’s almost 2016? This year just flew by for me. We are already thinking about Thanksgiving (and Christmas is right around the corner!!), and figuring out what to serve at the big meal. The theme for this month’s Blogger C.L.U.E. was Thanksgiving, and once I saw this Roasted Butternut Squash Dip on Cooking In Stilettos, I knew it would be a great fit for my holiday meal plan. You never want anything to heavy before the fall feast, and this is perfectly light and snackable.
Sangria is such a versatile beverage, sippable in winter, spring, summer and fall. I like to make many variations (depending on the season) and this is the perfect blend for fall. Spiced and sweet, with a bit of a kick! Autumn Sangria is exactly what you need for a tailgate party, jaunt through the pumpkin patch or at a bachelorette brunch. Really, you just need it… anywhere.
Are you as stoked about autumn as I am? I am in full flavor swing and this Squash and Kale Couscous with Roasted Chicken is exactly what you need on your autumn table. It is full of rich, fall flavors, and is a perfect one dish meal- protein, veggies, fiber- it’s got it all. Stocked with red kidney beans, sauteed kale, roasted squash and chicken thighs, tossed together with Israeli couscous, you’ll be full and happy after this dinner.

We’ve crossed over from beach days to school days, summer vacations are over, kids are starting a new year, we’re back to work… and although it doesn’t feel like autumn quite yet…autumn IS coming. With fall comes the most scrumptious spiced flavors, it’s my favorite foodie time of year. I am going to try to hold out until the heat breaks for my first pumpkin anything, but I can’t promise. Luckily, for this month’s Blogger C.L.U.E. we could pick any fall fruit to use in our recipes, so I went right for these Applesauce Pancakes from Eliot’s Eats.
Once again I’ve found a way to mix my love of pumpkin and spirits into something new. Last year it was the Pumpkin Pumpkin Beer Bread, which is in the oven right now.
This year, I saw a post for the Pumpkin Spice Kahlua and knew I had to get my hands on a bottle!! I started looking around and surprisingly, it was not well stocked. I had to wait a few weeks until a shipment came into my local store. I snatched up a bottle and got to concocting.
I know I am not the only one who waits for the annual release of the Pumpkin Spice Latte at Starbucks. I can’t help myself.
So I was thinking about my liking of the classic White Russian and twisting it up with some pumpkin spiciness. This is what I came up with, and I think it’s a home run.
If you don’t have espresso handy, you could always use brewed coffee, but I think they flavor is nicer with a freshly brewed batch of espresso.
This would be great to sip on while the kids Trick or Treat, or as a night cap after Thanksgiving dinner.
