Grandma’s Coconut Chews

Family tradition recipes are some of my favorite things to make, and to pass along, cherishing the memories that go with them. These Coconut Chews are just that, a sweet reminder of my Grandma Brown. She loved Christmas —  so much so that she and my grandfather were married on December 23rd (always stylish, she wore navy blue velvet and pearls).

Every holiday season, well into her 90s, Grandma Brown would make pies, date nut bread (what I wouldn’t do for a slice of that with some cream cheese slathered on top right now) and these ooey, gooey, bite sized Coconut Chews.

It wasn’t just the baking I loved about her at the holidays. She was always so joyful and excited to celebrate. Her face would light up on Christmas morning as we brought her the VERY OVERSIZED stocking full of goodies she loved.

Chocolate Chip Cookie Waffles with Whipped Cream

Since it is National Cookie Day, I thought it was appropriate/necessary to create a cookie-centric recipe. I have some new ones on the line-up which will be out soon, but had to share something scrumptious today. I was thinking about how I could use Otis Spunkmeyer Chocolate Chunk Cookies in some way, and then it hit me! Chocolate Chip Cookie Waffles with Whipped Cream. Yes, the cookies are IN the waffle. I know, amazing, right? They’re a liiiiiiiitle decadent, but totally worth it. Top them with freshly whipped cream, and a dusting of powdered sugar and, treat yo’self.

Leslie Knope would totally approve of these waffles.

Lemon Bars for #BloggerCLUE

Happy Spring, friends! I love this time of year, don’t you? Everything is bright, cheery and full of life. (And here in Florida, it’s already beach weather, YAY!)  I’m thrilled that it’s time again for Blogger C.L.U.E. and this month’s theme is Spring Vegetables. I may have bent the rules a little this month. Or, maybe I’m just adjacent to them. Yeah, that’s it. My recipe choice is vegetable adjacent. Fruits and vegetables, same family. It works… go with me here…
